Oh My Gosh!!! I just had to share this on the blog and you just have to try them out! They are absolutely delicious – I couldn’t even take a pic of the first couple of batches that came out of the oven – the boys devoured them!! This is such a lovely biscuit recipe and it makes about 100 biscuits so you going to need a little time to bake the whole batch. For me that just wasn’t an issue – I loved having an excuse to go and spend some time in the kitchen ☺.
2 cups sugar
445 grams margerine
5 mls vanilla essense
2 eggs
2 cups coconut
2 cups oats
2 1/2 cups flour
1 1/2 teaspoons bi-carb
2 teaspoons baking powder
a pinch of salt
4 cups of rice crispies
cream the margerine and sugar together
add the vanilla essence and eggs beat well
combine all the dry ingredients
except for the rice crispies make sure your bowl is big enough
I had to change to a bigger bowl before adding the rice crispies as the whole batch would have overflowed!
lastly add the rice crispies and mix well
make into to balls and press down with a fork
decorate with a cherry
bake at 160*C for about 10-15 minutes
